To be honest Neither really has had the standard 2 hour DBZ slugfest since they both have no manga to follow. The only fight I really remember from GT was Goku vs Baby. But I haven't seen GT in years.
-The super versions of BOGS and Revival of F was SO bad that EVERYONE and their mother complained about it being bad. Including the Japanese and Toriyama. -Universe 6 had no-note worthy fight except Hit against Goku (If not for Hit, U6 would have been a gigantic flop in general). SSJB Kaioken is really damn cool despite being little-sense and Hit's powers are so unique than any DB character before. -Goku Black had a few decent moments. Liked the manga more, but Vegito takes Zamasu to wrestlemania was cool -Waiting to see this so called "ULTRA UNIVERSE TOURNAMENT" Before delivering a consensus. But they're stepping their game up as of late so who knows.

I think once you get past the rather terrible re-tellings of BOGS and ROF, Super has some pretty impressive fight scenes.
BOGS and ROF films were both visually spectacular. some of the CGI was distracting, but the fast-paced battle with Beerus in the clouds was phenomenal. You felt the pace and fury these fights were going through up into the stratosphere. Everything was on point.
Even if we dislike ROF concept, we can all agree that the fight choreography was stellar. Plenty use of environments and techniques.
U6 offered us Hit's unique powers and skills. Every encounter between him and Goku was been on point. They've both learned and developed new techniques against each other. -Time Skip vs Kaioken -Time storage and vanish vs self-reviving Ki blasts. It seems both Goku and Hit improve and develop with each conflict, and that's great storytelling and organic growth on both sides. No power-ups for the sake of powering up or making someone relevant. If every fight was like them two, then the series would improve by a large margin. I think Hit has been a very big breakthrough character in the story and with the community. One of Toriyama's great ideas that has been executed well with good amount of pacing and character development with still enough mystery remaining to keep us coming back to see what he can do.
