I'm having trouble accurately describing how Vegeta's personality has changed from the end of Z up till now in Multiverse. Does anyone have a good summary of all of his changes?

I think it is very hard to describe it, but some things can't only be explained through words. I will say it's an evolution of Vegeta as a fighter and as a person that his evolution spiritually has led him to become an amazing fighter that rivals even the great Son Goku (when before Goku was insurmountable to Vegeta as we see with the Buu Saga where without Babidi's influence, SSJ2 Vegeta would lose against SSJ2 Goku, AND Goku has SSJ3 on top of that). U9 Tien I think said it rather well, "A fabulous power in the service of "good" has allowed them to overcome themselves in every regard." which can be interpreted as rather than Goku or Vegeta being led by ego and psychotic impulses like their U13 counterparts (and even U16 Vegetto to a lower extent though his development has gone backwards in that regard), they led by surpassing themselves and being the best fighters they can possibly be. It's also why Vegeta could peacefully accept losing to Goku as well while U13 Vegeta seemed more upset that his counterpart lost to someone he deemed inferior (Goku/Kakarotto).
Seems like the change in mentality changed his outlook on life too for the better. Because Vegeta isn't thinking about trampling on the weak anymore nor obsessively beating Goku to the point his quality of training suffered for it. So Vegeta treats his family better than he used to now, he even treats Goku better (though Vegeta still doesn't like to show softness).
